Here estoy is the conjugation of the verb estar in the present tense, and comiendo is the present participle of the verb comer (to eat).
Another example:
Estamos estudiando español.
We are studying Spanish

Here, estamos is the conjugation of the verb estar in the present tense, and estudiando is the present participle of the verb estudiar (to study).
Remember, when using the present continuous tense, the conjugation of the verb estar changes based on the subject of the sentence.
